PHYTASE Usage And Synthesis

Uses	Phytase has been used in a study to quantify the number of feedstuffs showing significant phytase activity. It has also been used in a study to investigate the effect of adjusting the pH to 5.0 (optimum for wheat phytase) during whole wheat bread making on phytase activity.
General Description	Phytase catalyzes the hydrolysis of phytic acid to inositol and free orthophosphate.
Biochem/physiol Actions	Wheat phytase can degrade inositol phosphate-6 and 5 at a pH of 4 and 5.
