Chemical PropertiesMethylheptenone is a colorless to pale yellow oily liquid with a fruity and lemongrass aroma similar to amyl acetate. A certain amount of acetone can be generated after oxidation. The boiling point is 173-174°C or 73°C (2400Pa), and the melting point is -67.1°C. Flash point 50 ℃.
UsesGB 2760--1996 stipulates that the edible spices are allowed to be used. Methylheptenone is mainly used to prepare flavors such as bananas, pears, citrus and berries, nuts and vegetables.
SynthesisMethylheptenone is obtained by fractionating the essential oil containing the product (such as lemongrass oil), taking the fraction at 160-180°C and treating it with sodium bisulfite.
