Chemical PropertiesYellowish liquid. It has a grassy, fat, fruit and spice-like aroma. Flash point 60 ℃. Soluble in ethanol and most non-volatile oils, insoluble in water.
Uses2,4-Heptadienal is mainly used for the preparation of blueberry, raspberry and miscellaneous fruit flavors.

Synthesis2,4-Heptadienal is synthesized by reducing heptadienoic acid to heptadienol with LiAlH4 and then oxidizing it with MnO2.
